Ingredients

  • 13.25 oz. of Puff pastry
  • 1 3/4 cups of Cheddar Cheese grated
  • 1/2 Onion diced
  • 14 oz. of Potato diced
  • 1 Egg
  • 1 pinch of sea salt and black pepper
  • 1 table spoon of Mustard (Optional/secret ingredient) – Dijon, wholegrain, or English mustard

Instructions

Start by preheating your oven to 400 degrees. While your preheating the oven, mix the cheese, potato, egg, onion, salt, pepper, and the optional mustard in a bowl.
After you’ve thoroughly mixed your filling together, cut eight equal sized squares/rectangles from your puff pastry.
Then, on a lined baking tray place four of the pastry squares. Without over stuffing the pastries, divide the onion and cheese mixture between the four pastry squares. Note: If you over stuff the squares they won’t seal well.
Place the other four pastry squares on top of the cheese and onion mix and using a fork seal the edges together. Brush egg wash on top of the pastries, and make a little incision at the top of the pastry before you place them in the oven.
Finally, place the pastries into the oven and bake for 30 to 35 minutes. Careful when eating because the filling is hot.
